You could certainly freeze it. We got through the water in a week and as long as the coconuts were good to begin with the water will last the week. For us it starts to turn purple after about 7 days, but it's gone by then usually. If a coconut was looking like it was close to purple then the water turns sour faster - so we don't mix it with the rest of the water. We just drink it right away.

The meat is something we freeze most of the time. If you're going to freeze it I'd recommend measuring it out (such as One Cup quantities) so that when you need it you can thaw out exactly as much as you need.

Have you heard of the ice cube tray trick? If you freeze your water, freeze it in ice cube trays. The liquid measure for a ice cube from a average 16 cube tray is; approx, 1.5 oz, 1.5 tablespoons or 5 teaspoons. After they are frozen take the cubes and put into a ziplock bag and then it's easy to measure!

I think it would last longer than that but I'm not really sure. It's never lasted long for us! It's gone too quickly. LOL Do you need ideas on how to use the meat?

Very cool - I really need to do this in my frig. I also especially like your kitchen stations from your other video and have begun how to re-think my kitchen setup which is less than ideal.
