After yesterday's post about week 1 I received a few requests to share my meal plan. This morning I sat down and mapped out my agenda for week 2. As you can see in the pic above, I write it all out on paper. I have 2 prep days a week: one weekend day & Wednesday. I'm lucky to have every Wednesday off from work, so I can re-stock mid-week. I work long shifts, so on the days I work that's pretty much all I do, can't think about making food. After I know what food I want to eat I make my prep lists and shopping list. Can you tell I used to work in a kitchen? I love to cross things off a list! What you can't see in the photo is the pile of recipe books and my laptop, used for meal planning inspiration :)

Here's a basic overview of what I'll eat this next week:

BREAKFAST: green smoothie & chia porridge (every day)

LUNCH: (always a salad & fresh fruit)
sat - kale salad
sun - garden salad with dressing du jour
mon - kale salad
tue - green asian salad with miso dressing
wed - garden salad with dressing du jour
thu - kale salad
fri - green taco salad

sat - zpasta (zucchini) with marinated mushrooms, olive oil, and fresh herbs, onion bread
sun - pizza
mon - nori rolls
tues - nachos
wed - zpasta with red sauce & nutballs & rawmazan cheez, onion bread
thu - pizza
fri - nori rolls (I like these on fridays because I can use up leftover veggie bits)

chocolate cherry swirl pie
onion bread
flax crackers
sunny seed hummus
frozen bananas for soft serve

Today is a big prep day for me, but it is SO WORTH IT! I will thank myself over & over again for not having to worry about food on my work days. It doesn't hurt that I love being in the kitchen, so this is a fun time that I look forward to.

Thank you so much, I was wanting to ask for a post on menu plans, its easy to say what you eat through the day, but sometimes its goo to see it in black and white...maybe a "Menu Plan Group" could be started, us newbies need all the guidance we can get....

whats your kale salad recipe? and i was wondering, i am on a budget so how much do you spend a week? Also when you prep all your food, where do you store it because i got horrible food poisoning from onion bread

Dianne, I'm going to the Raw Sauces, Dips, and Dressings class tomorrow.

I would love it if others would post their meal plans, especially what you're eating for dinner :). I need some ideas.

I'm so glad Penni pointed me to this post. My husband and I were planning on using today as a shopping and prep day, but unfortunately I haven't had the energy. But we are getting ready to sit down and plan a menu and we'll have to get groceries tomorrow. I know for sure we are doing smoothies for breakfast and salads for lunch. Dinners is what we need to really plan out. I'll try to get back on here and post our meals. Good luck to everyone planning ahead!
