Ok, so I just tried this recipe and it was soooooooo good! I couldn't believe it! I was a HUGE sushi fan, and this really hit the spot and I was so pleasantly surprised and I just had to share this recipe with everyone!

Raw Sushi


1 parsnip, peeled and chopped

1 tablespoon lemon juice

2 tablespoons scallions, minced

2 teaspoons minced ginger

1/4 tablespoon salt

4 sheets nori

1/4 cup cucumber cut into matchsticks

1/4 cup carrot cut into matchsticks

1/2 avocado cut into slices

1. Place the chopped parsnip into a food processor and process until it becomes the consistency of rice.

2. Add the lemon juice, scallions, ginger, and salt into the food processor. Do not over process.

3. Lay down the nori sheets on a bamboo mat or on a flat surface. Put down a fourth of the rice mixture onto and edge of the nori and spread it flat a little. Then put some cucumber and carrot sticks and avocado slices  on top of the rice mixture.

4. Carefully, tightly roll the nori roll with your fingers or sushi mat. Let sit for 5 minutes. You can cut it into sushi slices but I found it to be a little to wet for that so I ate it like a yummy asian burrito. TOTALLY YUMMY!!!!

Serve with nama shoyu

I've seen a similar recipe but I haven't made it yet...guess I'm going to have to try it now, cuz it sounds mighty tasty! Besides, it packs a lot fewer calories than the nut pate sushis I've made in the past.
