I'm on a pumpkin kick lately. In the previous post I wrote about a new favorite juice made with carrots, apples and pumpkin pie spice -- YUM~
For a few weeks I have been ruminating on a new recipe. I have several cans of organic pumpkin in the cupboard and I suppose that's what set it off. The only time I usually ever think about pumpkin recipes is around Thanksgiving, but it's been calling to me lately. I am not a canned vegetable person, well...except for canned corn, I still like that now and then, but the smoothie that's been inspired is one made with pumpkin, bananas and pumpkin pie spice, finally this morning I tried it -- did I say YUM!
I used about 2/3 a small can of pumpkin
couple pieces of frozen banana
2 small ripe bananas
small amount of coconut nectar
2 teaspoons of pumpkin pie spice
about 1/2 cup of water
I put the pumpkin and the frozen banana pieces into the Vitamix first with a little water and then operated on high for a few seconds. I turned it off and added the nectar, ripe bananas, spice and more water and operated for approximately 45 seconds.
First I poured it in a glass: Pumpkin pie in a glass:
Then I decided that since it was a bit thick to pour it in a bowl for some pumpkin soup:
Either way: in a glass or bowl it was very good. Enjoy!

I felt really 'out of it' as a teen - living in Hawaii - imagine, red-headed and freckled among the bleach blond and tanned or the raven haired Hawaiian and Asian girls. then came to celebrate my uniqueness! as an adult who is chronologically advancing my hair color began to fade - not grey necessarily, just lighter. One day someone commented on my 'blond' hair and I realized it was time for a change. So my color is Henna-enhanced for sure - and I LOVE it! and I still love pumpkins, and curry, and carrots and red/orange bell peppers - colorful and fun. P.S. I tried the Carrot, Apple, Pumpkin Pie Spice recipe - wowza that is a winner. Thanks for getting this pumpkin party started Sheryl!
