My Sunken Treasure Spinach Soup :)

Something that makes me smile:

When it comes to making smoothies, my boyfriend is actually LESS picky than I am!! :). He drinks things right down that I have trouble managing a few sips. It's so wonderful to see him eating healthy and I can tell it is helping him because he is more energized, he is sleeping better, and he is happier :). I love watching him enjoy his smoothie, I just think it's the most adorable thing ever!!!

Recipe:

Today I made more spinach soup :). I am going to call it Sunken Treasure Spinach Soup :). I based it loosely off of fitfortwotv's YouTube video recipe that was called, "Creamy Carrot Soup." I don't know a lot about what things go best together, so most of my recipes are based off of what I have seen others make, with my own twists.


Sunken Treasure Spinach Soup :)

2-3 packed cups of spinach
3 tablespoons of onion
1 garlic clove
5 celery stalks, chopped a little
3-4 carrots, chopped
1/2 of a Granny Smith apple
Juice of a little over half a lime (I like to add a little more at the end of blending and stir it in for a fresher flavor)
1/2 cup of coconut water (totally optional, just sub this amount with plain water if needed)
1 cup of plain water
1 tsp of cumin spice
1/2 tsp of chili powder
1 tsp garam masala spice
Black pepper to taste (I add around 1/4 tsp)
Salt to taste (I like AT LEAST 1/4 tsp of Himalayan salt. It really boosts the flavors.)
Messily chopped avocado pieces from 1 avocado (optional if you want this low fat)

Blend all EXCEPT THE AVOCADO in your vitamix. I like to use the hot soup setting and then stop it somewhere in the middle that way it doesn't get too hot. I don't know how to use the other settings on the vitamix yet other than the pre-set ones, so don't ask.

When it is finished blending, taste it, and if it's lacking try adding a little more lime juice and salt. Pulse on a low speed for a little bit to get those mixed in and then taste it again. Yum!

Next, pour this in a big bowl!!! Now dump in the avocado chunks and mix them in a little so they are separated from each other. They are the sunken treasure!! :)

Final step, is to sing pop eye the sailor man and wink with joy as you ladle this into yours and your loved ones bowls!! Make sure everyone gets some treasure ;) Take care :)
