Hi Friends!

It's day 4 and I'm feeling GREAT!  I've been 90-100% raw since New Years Eve and I LOVE it.  Last night, I made taco nut meat and nut cheese for a taco salad and I had the leftovers for today's lunch.  Big green smoothie this morning made with coconut water, coconut meat, pineapple, mango, banana, and kale.  Now I'm off to juice Penni's suggested drink of the day (red cabbage and granny smith apples).  I should be good to go until dinner, which will most likely be another smoothie or a drink.

 

No exercise yet, but that's okay.  I'm feeling great and the exercise will come.

Hi Glenda,

I have 2 raw food cookbooks that I bought awhile ago, one of them being Ani Phyo's Raw Food Essentials.  Here's the recipe for the Taco Nut Meat:

 

1 cup walnuts

1T extra-virgin olive oil

1T ground cumin

2 tsp ground coriander

1 tsp Bragg Liquid Aminos or Nama Shoyu

1/4 tsp sea salt

 

Process all ingredients in a food processor until mixed well, but do not overprocess.

 

Basic Nut Cheese Recipe:

 

1 tsp coarsely chopped garlic

1/2 tsp sea salt

2 cups of your favorite nut or seed (I used raw sunflower seeds)

1/4 cup fresh lemon juice (about 2 lemons)

1/4 cup water, as needed

 

Process all dry ingredients in a food processor, adding lemon juice and water gradually to mix well.  Add more or less water to reach your desired consistency.

That's great, Christine!  Thank you so much for posting this-- you are very inspiring. I'm so happy for you. I didn't quite get my act together to first couple days,  so it makes me so happy and hopeful that you're feeling so good already.
