Hi all my Raw Food Companions,

I had a good/bad week, because found I was up and down on the scales. I bounced back up 2.5 lbs and thought, "Oh no you don't." I worked way to hard to let me go back to where I was three weeks ago. I realized I had chowed down big time on all those yummie dense crackers I had dehydrated last week. So, two days of juicing just veggies brought me back in line. So, I finished out today just 1 oz. less than last week, but I was still down. Gained 2.5 but lost 2.6. I find for me if I just stick to two green smoothies for breakfast and lunch and a nice rich soup for dinner I will loose. But oh my Coconut Chocolate fudge bars are just the right amount of sweet and chocolate taste I enjoy after dinner. Just a piece. And I'm good. The recipe is really easy if anyone wants it. I learned the same lesson. I used to say, "If it's raw, eat it!" and I ate as much nuts, avos, desserts as I wanted. But now I find too much of a good thing makes too much of another good thing: me! I am reformed. I am back to green smoothies, and plenty of 'em, and some fruit and salad for something to chew. After I get back on track, I'll add back a few nuts and avos in moderation.

Scales? What's a scale? HA! Seriously. I think they are evil creatures!!! You are right though. A Raw diet high in nuts and fats, albeit good fats CAN pack on the poundage - I know!

Chocolate Coconut Fudge
(makes about 9 squares)

3 Cups of raw walnuts
1/2 Cup of Raw Chocolate Cacao powder
2 Cups Shredded unsweetened Coconut
12 Dates warmed in hot water to de-pit
(or 5/8 Cups of Agave Nectar)

(Make sure you use 12 dates. I've tried 10 and it just doesn't taste as good.)

Grind the walnuts in a food processor until they have a buttery consistency. Add dates and blend till smooth. In a separate bowl add coconut and chocolate. Mix well. Add gradually to walnut and date mixture. Blend until mixed. Pour out into a 9x9" glass Pyrex dish. Press down into dish. Place in refrigerator to harden. This is really good stuff. Get your chocolate and sweet fix in a nutritious way.

Just for grins ;-) 1 tenth of a pound is actually 1.6 oz. Almost 2 oz. so you did better than you thought!! Good job!
