hi dear friends - it's been a while since I've posted, and this seems like the time to share some raw goodness!
My son turned 27 over the weekend. He has been vegetarian since age 3 when he declared that he did not want to eat his friends (the animals) any longer. We both converted then and there and have been vegetarian for 24 years.
Recently my son took the next step to becoming vegan - inspired by his lovely new girlfriend who is very health conscious (thank you Universe!). And the two of them are enthusiastic about going to the Farmer's Market and other fresh, living food choices.
Recently my son wanted to know more about raw food preparation in advance of a camping trip. They decided it would actually be easier to do their meals raw than to cook food. So they came over to my little raw kitchen (3 years now)
I dehydrated kale chips for them, made a mix of chia seeds, nuts and dehydrated fruit for them to have prepped for their breakfasts and such. As we were making things for their camping trip, and I was also preparing a meal to share, my son said - 'you know I get it Mom - if you have just a few items of the right equipment, preparing food raw is easier and so much more nutritious!' I couldn't have said it better myself ;-) It is so wonderful to hear it coming from him!!
For his birthday I made raw zucchini lasagna, and carrot cake with a 'portrait' of my son!
They were beyond thrilled - and it was so much fun to celebrate the raw way.
