I seem to have an oversupply of beetroot.....not quite a glut but as I am the only one in the household who eats it I have a bit more than I can manage at the moment....and I don't want to waste any of it!

I have done some juicing but it's a bit on the strong side...and I'm told it's a bit powerful.....don't know if that means in the bowels department!

I read somewhere about a beetroot and chocolate cake (sounds decadent) but for the life of me I can't find a recipe. Can anyone help me please?

Yes,I do like grating them in a slaw Cynthia and I did think of pickling some Gill but I wasn't sure how to go about it any suggestions?

Oh, I too have a ton of beets in the garden right now.  I actually had beet, carrot and apple juice today.  Agreed it is a bit strong and i only like it on occasion.  The chocolate cake sounds divine!  Will look for recipies.  Another thing I make is borsht.......make beet juice and add shredded beets to it, thin sliced onion some real salt and apple cider vinager.  If it's too strong you could always boil some beets then add fresh juice to the broth along with the shredded beets, onion and seasonings.

That was the only raw one I found but  billions  ( not really!) of recipes for regular. 

 

 beetroot   + chocolate = heavenly

I have never made this cake- just googled it and this is the only raw one I found.  There are lots of recipes for regular beetroot and chocolate  baked cakes.  It looks really good- you could  make a glaze  of chocolate or serve it with raw chocolate ganache.
