hi friends,

just stopping by on this beautiful Monday morning to say hey to my RFR peeps!

I made this salad for dinner last night - a kind of Cinco de Mayo  tribute (couple days later)

here's how it goes:

bed of romaine, layered with avos, topped with corn & tomato & red bell pepper salsa, with a scoop of cayenne spiced sunflower/pumpkin seed pate, with a dollop of chipotle flavored sundried tomato sauce - que rico!!!

When my sweetheart took the first bite, he sighed and said..... mmmmmm you could save the world!

does it get any better than this?

Merhbani - thank you for the good wishes - I am definitely getting back to my frisky self (post car accident)

tho' taking it very easy - no dancing or hooping or rebounding just yet! I am enjoying walks and gentle stretching and I'm so grateful for having a solid foundation of raw food lifestyle to support optimum health - we know it's the healthy ways that serve us right?

hi Jill, glad you liked my little story. The sunflower/pumpkin seed pate is super easy:  soak sunflower seeds and pumpkin seeds for a while (a couple of hours or overnight) drain, and throw into Vitamix with lemon juice, olive oil, any leftover veggies that you've got (i had some zucchini and carrot) - and whatever spices you like - this time I used sea salt and cayenne for a little kick. Blend it up in the Vitamix - you may need to add a little water - but very little because you want the consistency to be scoop-able, not too thin. Enjoy!
