When most of us think of avocado, we don’t typically think of dessert. My personal favorites are guacamole, avocado nori rolls, and southwest quinoa salad. However, avocados pack a nutritious punch: they are rich in nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. So, for anyone with a sweet tooth or an undying love of all desserts, here is a simple and healthy way to indulge. Avocados are the star ingredient in this decadent chocolate mousse recipe from Beryn and Peter Daniel’s Rawlicious.

Chocolate Mousse

This is an avocado dessert special. It stores unbelievably well for up to a week in the refrigerator, even though you would think that the avocados should brown or start to taste funny after a few days. The key is to add enough sweetness to offset the taste of the avocados and enough cacao powder to change the color.

4 avocados

1 cup cacao powder

1/4 cup (about 65 mL) coconut oil

1/2 - 3/4 cup maple syrup

1/4 cup (about 65 mL) water

Blend all the ingredients in a power blender until smooth.
