Very thrilled to report that I've lost 8.5 pounds my first week raw! There's nothing like a good start to help confirm that you've made the right choice for weight loss and health... it encourages me a lot. I know a lot of the weight lost this week is probably due to cleaning out my system, but I'm hoping for a 1-2 lb. weight loss per week after this initial drop. I think the diet high in green smoothies agrees with me! :)
Starting weight on 3 March 2012: 248
Week 1: 239.5 (-8.5 lbs.)
Total weight lost: -8.5 lbs.
Equally as exciting is the fact that my older son loves my kale coleslaw and has been eating that with me, and even more exciting is the fact that my non-verbal son who has autism is using his communication device to request green smoothies! He drinks them faster than I do... it's amazing how much he loves them, and I don't make them super sweet either. I think his body instinctively is craving greens, so he literally drinks half the Vitamix blender container... really awesome!
My dear husband is building me four new raised garden beds today so that I can expand my veggie garden. I want to take greater control over what my family and I eat and not be held hostage by the rising grocery store prices. My seeds are all starting to come up and I am looking forward to transplanting them as soon as they get to a healthy size. I hope to soon enjoy the first of my kale, collards and chicory; I already have broccoli rabe coming up that self-sowed from last year. I will start tomato, eggplant, and peppers soon. The beautiful spring weather here in Northern California right now always turns my heart to gardening and the hope of a bountiful garden!
I haven't kept up with my food log the last couple of days due to being busy with my son, but it's been all raw except for my older son's birthday dinner at a restaurant last night... back to all raw today! It will be a little challenging, as I need to bake a birthday cake and a cooked pasta dinner for my son and his friends, but I am feeling strong. It's just not worth it to eat that stuff when I can feel so good on raw foods!

I am not sure how much I lost this week, as my scale is doing crazy things, but I think I lost another 1-2 lbs., which is where I want to be. As exciting as it would be to lose 8.5 lbs. every week, I know it's not healthy and a gradual loss is best.
Kiwi, I'm really looking forward to planting my raised beds. My husband got them halfway filled up with soil, and I hope we can finish the job next weekend. By then, I'm hoping I can start transplanting some of the seeds I started as well as direct sow. I filled a bunch of little peat rounds with seeds yesterday for all kinds of tomatoes, peppers, melons and other heirloom Italian seeds, and am hoping they all come up, as some of them are a few years old. I'll keep you posted! :)

I stayed about 90% raw this weekend, which is very positive, as in my pre-raw days, you could bet it would have been a food free-for-all with company all weekend.
Supermom, my husband is totally a hero! Not only does he dislike eating veggies, but he hates yard work/home improvement-type stuff, and yet he built those beds out of love for me, digging around the bases to make sure they were level as our backyard has a bit of a gentle slope, and moved about 2 1/2 yards of garden soil from the driveway to the back yard to start filling the beds. He will finish it this coming weekend, and I hope to start transplanting my seedlings and sowing new seeds. I'm feeling really lucky and blessed to have a husband who loves me enough to do this for me! :)

The other day, I needed to make a cooked pasta meal for guests, I pureed a flavorful raw sauce with fresh of veggies in the blender to add to the cooked sauce at the last minute. That way it was half cooked, half raw! I used tomatoes, sun dried tomatoes, onion, garlic, red bell peppers, parsley and basil. For the noodles, I cooked 100% whole wheat pasta and had shredded zucchini "noodles" as an option.
I used the raw only sauce over shredded zucchini noodles for myself and could offer it to others too!

When you make that cake and pasta for your son and his friends, make yourself a raw version of each. You deserve it and it will be pretty yummy! Just make sure the boys don't eat all of your raw goodies, lol :D
