I went to a great class at our Whole Foods Market last Friday. My friend Kat Conrad does the class and she is always incredibly clever. She puts combinations of food together that you would never guess would work. This was one of them! Desserts are one of her specialties. I am not sure if she has her ice cream recipes posted yet or not on her website, but just click on her name to check.
The vanilla ice cream is made using a yellow zucchini and is just amazing. My husband sprinkled cacao nibs on his, but I liked mine just plain. I used vanilla powder and it really gave it a rich flavor.
We also made chocolate ice cream. The chocolate one had the common green skinned zucchini, and it also had fresh mint leaves added. It was not only really rich, but refreshing as well.
We really enjoyed both of these this past weekend, but I have to admit we ate way more than we needed to eat!
I also made a butternut squash lasagna for Sunday dinner. (It went well with the vanilla ice cream! hehe!)

I've been eating a lot of "fauxghetti" made from zucchini run through my spiral slicer lately and just adding fresh veggies and sauced tomatoes to create a marinara on it. Funny how I never was a big zucchini fan until I started making it look like angel hair pasta (now "fausta").
Tonight I'm making a mock alfredo made with zucchini and pine nuts. I'll have to see how that goes but I'm finding myself excited to try new raw things - now I must check out this raw fauxsagna because it really is beautiful and looks so good. I'm definitely a visual person - and if the food looks "good enough to eat" I'm even more anxious to try it.
I'm starting to discover that I'm enjoying my kitchen again, sadly my brand new oven isn't getting much use though - except to hold a lot of my pans. I guess it will just mean I won't have to clean it so much.

Here's my dinner from a couple of nights ago - how odd that now I want to photograph my food. But I share it a lot with my friend in Florida - we have been encouraging each other (her encouraging me more than I need to encourage her).
Ice cream made from summer squash is pure genius. It's kind of funny when you think about all the people who eat conventional diets, trying to give away all the monster squashes from their gardens. If only they knew what they were missing :)

Raw at our house this weekend started with a request by my teen that I cut the produce and display it ready to eat in the fridge. The rest of the family agreed that plastic bags hiding mystery fruits and veggies tells them we have nothing to eat. I took this challenge and created a fridge salad bar wih lots of clear glass bowls covered in clear plastic wrap. They are loving it! Now they can handle getting creative with me in how to combine these foods for variety.
