Sometime around May 1st (about 2-3 weeks into my new 811 diet) I took my fasting blood sugar reading... it was 101 which is barely pre-diabetic, but still I was a bit surprised. I really thought my number should have been spot on- which is anything less than 85. 85-100 is pre pre-diabetic, 100-115 is pre-diabetic, 126 and above is diabetic. I have been eating "raw" for just over a year... but my diet was becoming very high in raw junk- lots of seeds and nuts (flax crackers, nut pate's and cheeses, chocolates made with cacao and coconut oil, noritos... where's the fruit and veggies??? Okay- a large kale salad every once in a while buried under creamy garlic dressing made with cashews! Did you know that the average raw foodist's diet can be as high as 70% fat???!!! Twice as high as the Standard American Diet!!!!! If I wasn't there, then I was pretty darn close!) I'm so glad I took that blood sugar reading back in May- now wished I had taken it before starting 811, but 2-3 weeks in isn't bad.
I thought to take it again June 1st, just to see if there was any change... but I've been forgetting every morning for 2 weeks! lol Last night I put my glucometer with my glasses so I couldn't forget.... this morning's reading? drum roll please......
84!!!!!!! WOOHOO!!! NORMAL!! (when have I ever been normal, hahaha!) I am ecstatic!!! It works- it really works!! Clearing the fat out of your system, getting it unclogged and all cleaned up allows your insulin and insulin receptors to function properly. I went from pre-diabetic to normal in 6 short weeks! WOW! :)

In the case of cashews I know the manufacturer gets away with calling them raw b/c they aren't roasted after they get them... to them they are "raw", but to us- NOT!

They sell it here at the asian markets (I live in Australia) but I want to try it in its native land I think for the first time.
I'm back on the 9th on July (we leave on 25th June) I will take photos of the trip and put them up on here.
I've heard that cashews aren't raw...and I can see how macadamias are probabaly not either as they grow here and you really can;t get into the shell with anything!!!
So far today has been good, full of juices and salads...except caved in and had Pine Nuts. (Im russian and grew up eating pine nuts so I'm used to having them every single day) haha look at me trying to justify my cravings!
I will look into the agave and cocoa as when I discovered how to make my own chocolate earlier in the year I really stocked up on the raw cocoa (as they say on the packet) and agave, also extra virgin coconut oil.
I really can't wait to get the book and read it! and will keep thinking of you when I go for the nut jar again. "keep the fats low and the fruits high" I seriously need messages like that on a daily basis as I 'forget'.

Watching him struggle with diabetes... while eating steak, potato chips and milk!!! :'( He doesn't not like fruits and veggies :( so I must watch him slowly kill himself and suffer.... and here is the answer right in front of him... so frustrating... pass the duct tape please!
Comment by Wendy Geesey on June 16, 2012 at 9:54am Oh, and for anyone out there, not just Anna- you can buy a glucose meter (glucometer) at just about any drug store. I bought mine from Walgreens- the kit (lancets, blood strips and meter) was half off for something like $10 or $15!! It came with 10 lancets and 10 blood strips... take a reading once a month to see where you're at- it's so worth the price and peace of mind- so cheap compared to a doctor's visit ;) Don't eat anything past midnight- and test before eating or drinking anything in the AM.

I am sooooo jealous!! THAILAND!!! I have been looking into retiring there!!! omg! I can fit in a duffel bag! lol Take me a long, PLEASE! ;) Oh, I would so help you with 811!! :) Have you ever been to Thailand? How long will you be? What part are you visiting? DURIAN!! omgoodness- I've never had durian, but I hear it is heaven!! custard style fruit- I soooo want to try it! Here it can cost $40 or more... there only $1-$2!!! You lucky ducky!!
You naughy girl (eating all those nuts!) lol But that's where I was too- way too much fat :( I heard that shopping in Thailand is a very fruitful adventure- every time you go to the market you can try something new! :)
Btw, most cashews are not raw- even tho they say they are. They cannot crack them without boiling/heating them- they also contain a toxic substance that is apparently neutralized by heating...? I haven't thoroughly researched it b/c I just don't eat them anymore.... but macadamia and cashews are not really raw- heated in order to shell them.... as I was finding out about a lot of "raw" food I liked... as in agave nectar... again, not usually raw even tho it says it is... and cacao!! UGH! I was like... wth? how am I supposed to be able to trust any label then?!!! How? by going eating raw fruit and veggies! :)
You will feel so amazingly better on 811- and you'll be so happy about what you are eating too :)

I've never had my blood sugar checked and still waiting for my 80/10/10 book to arrive (off to Thailand in 7 days so fingers crossed it arrives as I want it to be my reading material for the plane!)
I can totally relate tho'... I think I'm in a little bit of a raw vegan rut at the moment and eating wayyyyyy too much fat. For instance this morning I ate 50 g pine nuts, some raw soaked cashews and apricot kernels, had lots of vege and fruit juice but then had a salad with a creamy sesame tahini dressing . Then ended up making my own raw chocolate using coconut oil " just because "...But that is soo much fat I've actually put on 5 kg with this lifestyle I need to do a week of raw food and juices with no nuts just before thailand so I get into good habits. And you are a real inspiration with this post I think it's just what I needed to keep me going!
