Ok so firstly, these 2 recipes I got from Rawmazing.
The first is of the Sun Dried Tomato Pumpkin Seed Pesto recipe. Honestly I loved the idea but just used some left over pesto that I had and put about a tablespoon and two sundried tomatoes on top of thick tomato slices with a balsamic vinaigrette (made with agave, not honey). I have listed the original recipe because it looks amazing, but my version of it was really good too.

Another great recipe! So tonight I wanted to make a raw lasagna, but I wanted to try something new besides the regular one with a marinara sauce so what's just as good as a raw marinara? PESTO! So I threw together a raw lasagna with a pesto sauce and get this, my husband loved it!! That's right, my SAD eating hubby had 2 helpings, and that's something. So here's the recipe. So today was an interesting one. I bought a Thai baby coconut to make a mylkshake this morning... and it was an interesting experience. First I read how to open the coconut online and in my Ani Phyo book and I thought I had it down... and I was wrong. So first I shaved off the top husk and exposed the wood pointy part on top. Ok, so these last couple of days have been crazy busy! I've had so much work to do around the house and homework do that it's making my head hurt. As far as staying raw, I've been pretty good. I always have a raw part to all my meals, but I've been sneaking in convenience foods almost every meal (like frozen vegan foods, or non raw crackers and the such). First, what I ate today. This morning I added blueberries and honey to my oatmeal and it was delicious! For lunch I had some Italian pate with raw crackers with some strawberries, and for dinner I made my leftovers from m moo shoo vegetable recipe.

I wasn't really raw today. I only had a raw lunch of raw crackers and an Italian pate and a side of strawberries. I think it was because I didn't make stuff ahead of the time and didn't plan ahead. I'm a little disappointed in myself, but it's ok. I just have to keep positive and plan my next week.

So I'm starting to notice when I get headaches and fatigue. I usually get a headache around 11 or 12ish, and I think it's because I'm hungry. I've also noticed I feel really tired around 3, but wake up again after dinner, and then get tired again around 7-8ish... I think this has to do with needing energy or calories. Today went well. I had the most delicious salad with pineapple and a lemongrass dressing. It was amazing! I also had a kind of spicy toast with a pineapple salsa, again AMAZING! I'm really looking forward to figuring out what was in the salad and how to make that dressing. Well today was not a raw day, well not completely that is... but I knew it wouldn't be. I can't believe it's day 7! It really doesn't feel like it to me. I'm so amazed and surprised at how easy this transition has been and I really hope that my motivation doesn't falter in the following weeks. I have found that making a large dinner and splitting it in two really helps me because I can take the second part for lunch the next day. Today went pretty well. Today I went to a restaurant with my husbands family. They didn't even have many vegan options let alone anything raw.
