My Very Happy Vegan Easter and a Hidden Gem! :)

A few days ago I was revealed a hidden gem!!  There's this wholesale produce shop literally down the street from my dad's girlfriend's house, where I visited for the first time on Easter with my boyfriend.  Dad took me there as a treat and I bought an incredible amount of produce and for under 30 dollars!!  It would have been around 100 at Whole Foods!! :)  Very pleased.  And I even found young thai coconuts!!!!!!  I haven't been able to find those ANYWHERE.  And they looked great!  Not…

2011 JuiceFeast Day 3

Today is day 3 of my Juice Feast.  I think that part of the initial excitement was 'buying' the new breville juicer and 'buying' all the produce.  I was asked at both Costco and Sprouts if I was juicing.  I proudly said YES.

 

I also have been drinking wheatgrass for two weeks.  I really have a hard time with it, but I'm doing okay.  Today I mixed some with fresh coconut water and chase it with more -- it worked.  I didn't 'taste' it for hours after.

Blog no.1 The Start of Something Good: 3 month Jubilant Juice Feast 2011

Hello All!

 

I am in need of support.  I am in the beginning stages of a 3 month juice feast.

 

I have decided to take a tablespoon of cold pressed olive oil a day in addition to a gallon of green juice.

 

As of July 8, so for the past two days I have been primarily consuming a gallon of juice.  Tomorrow, July 10 I am aiming to begin the oil+ juice only.

Coconuts, soap, and just general updates!

I love them. I really do. But if I am trying to lose a little weight, should I avoid them? Can I use them in moderation? What do you think? I struggle with this one....

back to routines & food combining after a crazy week...

I spent this past week visiting with my in-laws which always includes many meals out. They stay at a resort about 30 minutes away from us. I usually try to cook most meals while they are here as my youngest daughter has celiac disease so eating out is a challenge and a gamble and it is so much easier to keep her safe in my own kitchen. Four Ingredient Smoothie

Two days ago I opened my very first fresh coconut .  I drank all of the coconut water right away but I stored most of the coconut meat in the fridge and have been using it these last two days.

A touch of the tropics in the snow.

An at home day! I LOVE at home days!



Snow. Ice. 18 degrees and a wind chill of 1 degree!



Schools closed.  Our office officially closed too!

Brussels sprouts and pears with a teriyaki-ish dressing

Inspired by our very own Molly (hi, Molly!), I have mixed Brussels sprouts and pears in a salad. The recipe would be basically this:

  • Brussels sprouts, sliced/chopped fairly small pieces
  • Pear(s), sliced/chopped into fairly small pieces
  • coconut aminos (Coconut Secret)
  • coconut vinegar (Coconut Secret)
