Sometime around May 1st (about 2-3 weeks into my new 811 diet) I took my fasting blood sugar reading... it was 101 which is barely pre-diabetic, but still I was a bit surprised. I really thought my number should have been spot on- which is anything less than 85. 85-100 is pre pre-diabetic, 100-115 is pre-diabetic, 126 and above is diabetic. Hi there! Well it's been just about 2 months now since I've gone 811 (80-10-10 for those who don't know). It's been both awesome and hard! I've been raw for over a year now and have been on a 42 days juice fast over the winter- so a lot of the initial detoxing has taken place... about 4 layers of detox I'd say. I am putting together material for Raw Food classes that I plan to hold at the local YMCA. Everyone is different, and all I know is what has helped and worked for me. I would really appreciate (and I'm sure so many here would also benefit!) if you could tell me what was your biggest obstacle with going raw, and what was the one (or two ;) biggest things you did/changed that helped you the most.
