Raw France

Posted on July 29, 2010 at 4:30pm 6 Comments

Just got back from 2 weeks in France, which was fantastic from a food perspective (and beach, sunshine, wine, and stylish automobile perspectives). I thought I'd eaten white peaches before, but not like these; amazing. The markets were laden with fruits & veges, and raw milk cheeses for thems whats eats 'em. Regrettably, raw pain au chocolat were nowhere to be found.

Smug

Posted on February 16, 2010 at 4:43pm 6 Comments

Lately I've been noticing how decrepit people look in the street - worn, with dull opaque skin and hair, overweight and sluggish. Living in the town that invented deep-fried mars bars and has more tanning salons per head than any other European city doesn't help. Nor does the smoking ban which forces ghoulish midday drinkers out of the pubs and onto the streets for a gasper.

I feel super smug because even though I'm a million miles away from having a perfect raw diet, I'm still eating… Continue

Killing enzymes

Posted on December 28, 2009 at 12:19pm 4 Comments

I've been thinking about enzymes a lot today. We use sourdoughs, poolishes, bigas or saved doughs in every bread we make in our bakery to improve their texture, flavour, keeping quality and nutritional value. Sourdoughs, poolishes etc can do all these things because they're packed with enzymes. We go to lots of trouble to give the enzymes plenty of time and a comfortable environment to do their work, then we slide the resulting loaves into the ovens and kill them all off! Raw food has made me… Continue

Raw but not local

Posted on November 25, 2009 at 4:28am 3 Comments

We're on holiday on Lewis in the Outer Hebrides. We're having an unscheduled extra day because the ferrires were cancelled in the high winds. Local food at this time of year is potatoes, neeps, eggs, lamb & chicken, and of course whisky. Thanks to the dubious magic of supermarkets and global chill chains I've been able to make green smoothies every day and eat salads. Didn't bring a sprouting jar, which was a shame, but overall not a bad effort. The friends we're staying with think I'm… Continue

I saw your question about searching for ingredients. This is what I do : I go up to the very top right hand side of the webpage where there is a search window and put in the ingredient. It will bring up every post or mention of the ingredient. This might help you a bit. Good luck!
