Michelle did a video on "Scrap Burgers," patties that are made out of whatever you have left over. I made some a few days ago and they are incredible! I even made some raw vegan mayo out of cashews, pumpkin seeds, raw apple cider vinegar, raw honey, and olive oil. Serve patty on romaine leaf 'sandwich' with mayo, sliced tomato and onion and a leaf or two of basil...mmmmmm!!

Today was spring cleaning at the farm where I board my horse, and I was hoping there would be some "sit down" activities for me...nope! Now, everyone get ready to yell at me--I mowed my front yard this morning, and my knee wasn't at all happy by the time I got to the barn. But I did some easy sweeping, got to meet my horse's doppleganger (even my daughter gasped when I showed her a pic later--and our horse is rather distinctive-looking--or so we thought!) and we had a wonderful picnic…

The kids are being ____________ (fill in the blank with the profanity of your choice) over my friend staying with us to help out--and it's not like either one of them lift a finger around here! The stress is making my knee hurt worse, so I'm at the point where I'm cutting them off and not speaking to either of them.

My therapist was quite impressed with my progress! She could tell I've been doing my exercises at home.:-) She had me do some small (2") steps. It seems like the swelling is finally going away, and my knee is much more flexible. Still a bit of discomfort, but overall, very good!
