Nutritionists and Dieticians

I want to start by saying that I think I might have finally grown up. At only 41 years young, I think I know what I want to be. It has been my life work to cook and make food for people as a chef, so I already know or knew a lot about food and its effects. Since I have found Penni and her great collection of health "nuts", I felt like I was empowered to talk more and more anbout the healing powers and destructive powers of food. SO, it follows logically that I should take it to a new level and…See More

Married with 3 wonderful boys. I work in the restaurant industry but am going to go back to school and get a paralegal degree. It would be nice to use my brain finally. Started playing adult hockey few months ago and have been practicing karate for over 9 months now. I just started the raw food lifestyle and have lost about 20 pounds in a few weeks. My mission is to see how low I can get and still be not only healthy but be an even better role model for my kids

Recipes, motivation. I am pretty bull headed so once I see the great progress no one will need to convince me that I am doing the right thing. But recipes to keep things new and changing would be great

Feeding Kids Vegan

Posted on October 2, 2012 at 6:18pm 7 Comments

After reading the China Study and being more than intrigued by what I read, I wondered with my wife if we would be able to stop the kids from drinking milk and eating dairy and casein based products for one month. Any ideas on how we can feed 3 hungry boys a lunch that they will enjoy and not miss the animal products or the milk with the morning cereal. I know oatmeal and Cream of Wheat are prob good choices, but I am open to other great ideas. Thanks friends

Water Fast

Posted on July 30, 2012 at 5:10pm 1 Comment

I wanted to start a water fast. I was planning on only going a day or two and then see how I feel. Any tips on making it more effective. Can I still use Chia seeds and call it a water fast?

Hi Matt,

My favorite go-to green juice is; 1 bunch of kale, 2 heads of celery, 3 cucumbers, 3 green apples, 3 gala apples, 1 small bunch of romaine, 1- 2 lemons, large chunk of ginger root and 1 - 2 habaneros. This amount makes 3 - 32oz jars.

And kudos to you for pursuing a healthier lifestyle and losing the weight.........and even more for stopping your meds.  To me all meds are poison.  Sometimes a necessary evil, but best avoided if at all possible.

Hey Matt

Up here in Boulder the closest fires have been in Estes Park and one in a canyon in the southwest foothills....that one brought a lot of smoke into the city, especially the day after it started, but we are just a bit east of town, so didn't get too much smoke....just occasionally.

It's the fire down in Colorado Springs that has been so bad, as I am sure you are aware.  It basically wiped out an entire subdivision....I can't imagine having to deal with that....I don't know what is worse, tornadoes or raging wild fires....both are very destructive.

So what is your most kick ass drink?  A juice?  Mine would be a straight green juice, with parsley, kale, dandelion, romaine, celery, cucumber.   A bit of daikon radish (the radish that looks like a giant white carrot) would add even more kick.   When I first started all this, I wouldn't have been able to down an extreme green juice, but now a days, while it's not my favorite, it's no big deal.

Hey Matt, I am fine.  I am not someone with a lot of weight to lose...20 lbs is what I am dealing with....and I don't have any major health issues...candida being my only issue, but I've dealt with it for so many years, we're old frenemies.

Thanks for asking....and how are you?  And thanks for being a friend.
