This morning we listened to a talk entitled Why Raw Food? Of course most of us know the answer to that question, but it's good to hear somebody else give the presentation as we can learn how to do something like this for ourselves when we get home. We also had a great brainstorming session on marketing and where we could hold talks and demos to promote our culinary classes. So the posts are getting shorter and shorter, as I'm starting to flag slightly. Thankfully it's nearly the weekend and I'm hoping to recharge. Well hopefully I will survive the weekend and not have a total meltdown. I've hired a car and I'm hitting the streets of Fort Bragg, trying to stay on the right side of the road and drive an automatic (without looking for the clutch all the time). A short and sweet post. Pictures of the delicious lemon tortes we made this morning. The filling was just like English Lemon Curd (but without the butter and eggs!), tart but creamy and it set to a perfectly firm consistency (using an irish moss/agar agar combo). I can definitely already envisage some other fruity variations of this torte. The rest of the day we did quite a lot of prep work on quiche cases, muffins and scones, all to be revealed after 24+hrs in the dehydrator!
I had a lovely start to the day this morning as I volunteered to help in the kitchens before class. My main job was stripping kale and helping to make the smoothies we get for breakfast. I also got to rinse a hold lot of sprouts! It was really cool to spend some time behind the scenes as they are so super organised and you can really learn a lot.
