Veggie Crudité with Chipotle Hummus
For the crudité:
Cherry or grape tomatoes
Sliced bell peppers
For the chipotle hummus:
2 cups sunflower seeds, soaked for 2 hours
1 zucchini, peeled and chopped
1⁄2 cup raw tahini
1⁄4 cup fresh lime juice
1⁄4 cup cold pressed extra virgin olive oil
2 garlic cloves
1 – 2 teaspoons sea salt
1⁄4 teaspoon dried chipotle powder
Water, as needed to blend
Combine in a food processor, or blender; mix until smooth and creamy.
