Tomato Stuffed Mushrooms

For the Tomato Stuffing:
½ cup sun-dried tomatoes, soaked to rehydrate (reserve water for
blending)
1 cup sunflower seeds, soaked 2 hours
2 tablespoons water
3 teaspoons sweet onion, chopped
1 tablespoon fresh lemon juice
2 teaspoons fresh basil, chopped
2 garlic cloves
½ teaspoon sea salt
Freshly cracked pepper, to taste
1 tablespoon chopped fresh parsley, for garnish

For the Mushrooms:
1 container of baby Bello or button mushrooms
Coconut aminos (or nama shoyu, or wheat-free tamari)

Pop or cut the stems out of the mushrooms. Carve out a bit of the insides of
the mushrooms if necessary to create a cavity for stuffing. Brush the
mushrooms, inside and out with the aminos, or other soy alternative. Allow
the mushrooms to marinate for 15 – 30 minutes.

Place the rehydrated sun-dried tomatoes, sunflower seeds, and water in a
food processor or blender. Pulse-process until coarsely combined. Add the
onion, lemon juice, basil, garlic, sea salt and pepper. Use reserved soak
water from the tomatoes as needed to blend. Process until a pate- like
consistency is achieved. Stuff the marinated mushrooms and serve,
garnishing with freshly chopped parsley.
