Marvelous Marinated Bean Salad
Any favorite variety of beans can be used for this mouthwateringly delicious salad with southwestern flavor.
2 cups cooked garbanzo beans, cooled
1 cup cooked black beans, cooled
1 cup cooked red kidney beans, cooled
1 cup fresh or frozen thawed corn
1 small onion, chopped (I used red/purple onion)
1/2 cup chopped orange or red bell pepper
1/4 cup apple cider vinegar (I actually used white balsamic)
1/4 cup fresh lime juice
handful chopped cilantro
1 tablespoons cold pressed organic extra virgin olive oil
2 tablespoons honey, coconut or agave nectar
1 jalapeño, seeded & minced
1 clove garlic, minced
Pinch Himalayan salt
Combine beans, onion and bell pepper in a large mixing bowl. Put the rest of the ingredients in a blender and blend until emulsified. Pour the dressing over the bean mixture, coating well. Place in an airtight container in the refrigerator until ready to serve.
