RED HEMP & BLUE SALAD
6 cups fresh field greens
2 cups fresh garden herbs (basil, thyme, mint, parsley, oregano, nasturtium, etc.)
1/3 cup fresh raspberries
1/3 cup fresh blueberries
¼ cup hemp seeds
for the Raspberry Vinaigrette:
½ cup fresh raspberries (thawed frozen will work, too)
¼ cup lemon juice (or balsamic vinegar)
¼ cup apple cider vinegar
2 teaspoons raw honey
1 teaspoon Dijon mustard
¼ cup cold pressed olive oil
Put all ingredients into a blender and puree until smooth & creamy.
To Assemble:
n a large bowl, toss together the leafy greens and garden herbs. Pour raspberry vinaigrette over the greens and toss well to coat. Divide the dressed greens onto chilled salad plates and sprinkle the berries and hemp seeds on top.
