Sliced Zuchinni noodles, sliced cherry tomatoes, muchrooms (marinated in nama shoyu and olive oil for about an hour), and chopped red bell pepper.
The dressing is a bunch of cilantro , with a pinch of salt, a handful of pecans, a tablespoon of Nutritional Yeast, squeeze of lemon, and just a bit of olive oil. Put into a bullet blender until it sticks and the pecans (or whatever other nut or no nuts if you want) are in small pieces or pulverized. Then add water till you get a thick dressing.
Toss noddles and veggies in the sauce =)
