Raw vegan apple pie

A slice of raw vegan apple pie after an awesome day of advocating for animals at Earth Day.

Crust is 3 handfuls pecans, handful of softened dates, dash of pumpkin pie spice, scrapped vanilla bean, and a pinch pinch of salt. All mixed in a food processor until crumbly. Placed in a pie tin that was lined with that parchment stuffs.

Topping is 1 gala apple and a granny smith sliced on a mandolin slicer. Then one layer of apples, squeeze of lemon juice and a sprinkle of cinnamon. Keep layering like a lasagne until you run out of apples. Then I dehydrated for about an hour at 114 degrees, just to soften the apples.

It's a lot like a tart. For a more pie like filling blend an extra gala apple (or a banana or other soft fruit) till smooth and layer the apples on that.
