Onion Rings

Raw Onion Rings

1 sweet onion (any variety)

Bowl #1
5 tablespoons cold pressed organic extra virgin olive oil
3 tablespoons filtered water
1 teaspoon sea salt

Bowl #2
1 cup golden flax meal
1 cup ground almonds (or almond flour) 11⁄2 teaspoons paprika
1⁄2 teaspoon garlic powder
1 teaspoon sea salt
1⁄2 teaspoon freshly ground black pepper

Slice the onion and separate into rings. In a mixing bowl, combine olive oil, water and sea salt (bowl #1). In another mixing bowl, combine flax, almonds, paprika, garlic powder, salt and pepper (bowl #2). Divide bowl #2 in half and set aside. You should have 3 bowls, bowl #1 as the liquid, bowl #2 containing half the coating, bowl #3 containing the other half of the coating, reserved.

Take an onion ring and dip it into bowl #1 and then into bowl #2. Place on a mesh screen dehydrator tray. When you're half-way through coating your raw onion rings, switch to your reserved bowl #3 of coating mixture, it will stick to the rings better.

Dehydrate at 115 degrees F for 2 hours, then turn down to 105 degrees F for 10 – 12 hours, or until crispy. This recipe makes about 2 –3 dehydrator trays full, of about 20 - 30 onion rings. Serve warm and enjoy!
