Marvelous Mushroom Curry
1 pint mushrooms ( I used button mushrooms, but it would be lovely to use a mixed variety)
1/3 can coconut milk
1/2 avocado
1 jalapeño pepper, sliced (can use pickled)
1/2 teaspoon saffron
thin slice of ginger
1 - 2 teaspoons chopped fresh chives
pinch pink Himalaya salt & pepper
chopped fresh tomato
drizzle of olive or extra-virgin coconut oil
Cut mushrooms into bite size pieces and marinate in a bit olive oil. In a blender, mix the coconut milk, avocado, slices of jalapeño (optional for heat), fresh chives, 1/2 teaspoon saffron, thin slice of ginger, salt and pepper to taste.
Taste , make sure you have a creamy texture with a creamy and spicy taste, if to spicy add more coconut milk, jalapeño, ginger, or salt if desired.
Combine the sauce with the marinated mushrooms and finish with finely chopped tomato, chives and jalapeño to serve.
