Kicked Up Coleslaw with Cilantro & Jalapeño
1⁄2 head green cabbage, thinly sliced
1⁄4 head purple cabbage, thinly sliced
1 red bell pepper, seeded and thinly sliced
1 small bunch cilantro, chopped
1 – 2 jalapeños, seeded and minced
1 lime, juiced
1 tablespoon cold pressed organic extra virgin olive oil 11⁄2 teaspoons ground cumin
Himalayan sea salt and freshly ground black pepper
In a large bowl toss all ingredients, cover and chill for 2 hours. Toss again before serving.
