Delicious and dense, fig jam can also be used as a sweetener, much like date paste.
20 dried Black Mission figs, stems & hard ends trimmed
1 teaspoon fresh lemon juice
Soak the figs in pure water to cover, for 8 hours, or until fully soft and plump. Drain and reserve
the soak water. Process the dates in a food processor, adding a bit of soak water only as necessary
to combine. Stop when you have a thick, jam-like consistency. Fig jam will keep for a week,
covered in your refrigerator.
