2 cups of whole soaked chickpeas
1/4 cup of vegan mayo
1 tsp of stone ground mustard
2 tsp of white vinegar (can use acv)
1/4 tsp of pink himalayan salt
1/8 tsp of black pepper
1/4 cup of chopped celery
1 tbs of sliced green onion
bread of choice
1. Combine first 6 ingredients in a large bowl, stir and slightly press with a fork until all ingredients are well combined.
2. Next throw in celery and green onion and stir to distribute evenly in mixture.
3. Place leafy greens onto a slice of bread and top with mixture, garnish with fresh cracked black pepper or cayenne, press other slice of bread on top and enjoy!
