This is an adaptation of a recipe I got from Jason Mraz, the avocado-farming, raw-food-eating musician! Even my kids and father, who despised avocado, loved this chocolaty treat!
1 ripe avocado, peeled and pitted
8 soft dates, pitted
2 tablespoons coconut or agave nectar
1 tablespoon vanilla extract
1 teaspoon coconut oil
1–2 tablespoons raw cacao powder or carob
A few fresh blackberries or raspberries & fresh mint for garnish
Combine the first six ingredients in a food processor, blending until smooth and creamy. Serve in a pretty martini glass with fresh raspberries for garnish. Your friends and family will never have to know that you put something good for them into this mousse!
