Haven't been on here in a while and see that there hasn't been much activity.  Is this closed???

Anyway, I made a delightful dinner last night!  Had zucchini noodles topped with a creamy avocado pesto sauce, chopped tomatoes and roasted veggies (asparagus, yellow pepper & more zucchini).  Didn't take a picture sadly...and next time, I think I would skip the roasted veggies.
