I think one would have to make a lot of nut milk to have 2 cups of pulp.

I usually make a double batch of milk that makes about 2.5 quarts and get almost exactly 2 cups of pulp.

what do you do with all that nut milk?

My family and pets drink it, some of it goes back into this recipe and others like soups, on buckwheaties or raw granola, etc.  It always seems to disappear!  LOL  

If you can't go through it quickly enough, I suppose you could also freeze it in ice cube trays and be able to pull out a few whenever you need it.
