I just picked alot of tomatoes off the vine and will not be around to eat them, I used to blanch and freeze them,  can I just freeze them without blanching them?

i am dehydrating mine
I freeze mine all the time.  When you pull them out to use--its great for juice and soups!

Chris, How do you prep them before you freeze them?  Do you store in plastic, and how long do they last in freezer?  thanks!

Wash them, pop them in the freezer in a gallon zip lock freezer bag(yes, it's plastic).  I generally use a straw to suck the air out of the bag.  They last through the winter--sometimes ;-)    When you thaw them out later the skin will be wrinkled and really doesn't look pretty, but it doesn't hurt the taste if using them in sauce or juice.

You can also blanch them for a minute in boiling water, then put them in real cold water, remove from the water. Peel, cut out blemishes, remove seeds if you want, chop into any size and put in quart freezer bags.
