Lately I've been craving sushi with a ridiculous passion. I am vegan, so no raw fish please:).
Also, I found a replacement for cooked rice, by processing either jicama or cauliflower until a rice-like consistency. Any other suggestions? Recipes/suggestions would be greatly appreciated:)

I just learned of using collard leaves as a wrap and putting anything you like in them.  The secret was to let the leaf-minus the stem-soak in hot water to make them limber enough to roll.  I tried them with avocado, carrot, squash and white daikon radish shavings using a peeler, and shitaki mushrooms (slightly dehydrated and soaked in your favorite raw sauce, ginger, amino acids and garlic). 

I know Penni did a raw Hoisin sauce-but don't have immediate access to it.  I have been known to use the real thing ;-) too!

Don't know if you are still looking for sushi recipes, but I often made the 'almond veggie pate nori rolls' of Ani Phyo. It's quite easy:
First, grind 1 cup of almonds and 2 cups of cashews, and put aside.
Second, put 1 tablespoon grated ginger, 1 clove garlic, 3 carrots (chopped), 1/4 cup onion (chopped), 1/2 cup raisins and a teaspoon of salt in a food processor. After processing, add 2 table spoons olive oil, 1 table spoon lemon juice and the ground almonds and cashews and process to mix well.
Third, put this mixture on 4 sheets of nori (with some spinach leaves on top) as you would normally do with your rice and fish, and wrap firmly.
Serve with some nama shoyu and wasabi.
