Lovely! I have actually made coconut kefir for about 10 years but have recently taken a hiatus from making it and water kefir. But I really like the idea of the secondary ferment. Yum! I do that with the Kombucha. I guess I will have to get back at it.
By the way, I just dehydrate the grains when I get too many.
I am a big fan of water/coconut kefir!!!
