Hi Everyone! I am about 30% raw still learning but need a good beginning book so I can better understand buying raw nuts, how longs food items keep in the fridge such as nuts, and items you make, etc. Basically, I need a Raw Food bible so I know how to actually eat versus juice, smoothies, etc.

I appreciate the help!

There are a lot of great books out there.  I started with Brendan Brazier's Thrive and moved to  Kris Carr's Crazy Sexy Diet (very easy)...they are both very thorough.  Alissa Cohen's "Living on Live Food"...Mimi Kirk, David Wolfe....there are tons of books.  This website has just about everything you could want for free too.

I saw all of the books in the library but couldn't tell which would be good for a beginner and would spell out how to keep "raw" foods.

I don't really go into that detail in my book Raw Food Cleanse.  I have written so much over the past 2.5 years that I honesty don't have a specific recommendation of one of my books that talks about how to store or keep raw foods.  That would be a great question to ask in the Pantry and I encourage you to start a discussion there and you can get all of your questions answered right away.   I do think you would enjoy my book Raw Food Cleanse though - it is chocked full of great recipes and lots of instruction.  It's around $10 on Amazon : )

Juices usually keep for one day, stored in mason jars in the fridge.

Green Smoothies will last for up to 3 days.

Because raw food is so simple to make, fresh is best.  I do not store prepared raw foods long term.  I store my nuts and seeds in the freezer or fridge.

Wow, didn't know green smoothies can last for up to 3 days. That is great when trying to plan ahead. Thanks Susan!

I would like to add that although smoothies or juices CAN be consumed safely after 24 hours, the nutritional quality of blended or juiced liquids decreases the older it becomes.  Oxidation, even in a full, airtight glass jars, occurs and depletes the vitamins and minerals and all other phyto-nutrients.  I HIGHLY encourage everyone to drink prepared juices and smoothies within 24 hours.  All of the major health educators and healing centers internationally are in agreement with this.
