Had to watch it twice to make sure I didn't miss anything and write her recipe. It is a keeper! My daughter got a new Vita-mix last winter. If we can gather all the ingredients, it will be fun to see how it processes all those dates and ingredients at one time. I've never used a persimmon so it was wonderful that Kristina explained the importance of only using the very ripe one.

Christina is someone who really "walks her talk." This will be my first holiday season eating healthy. Challenging? Maybe, but exciting for sure. Right now I am still juicefeasting, and plan to continue to do so for at least a couple more months. The whole idea of the juicefeast is to help me to get back on track with eating raw. When I return to eating rather than juicing raw foods, I can hardly wait to try some of Kristina's recipes. In the meantime, her happy bouncy high-spirited videos keep me inspired and focused on sticking with my juicefeast. Kristina makes it clear that eating raw is totally a happy choice.

I made it for my mom last week, and even my sister (who is not interested in eating raw food) stepped up to the plate (hee hee - little pun there) and decided to give it a try. She loved it too! Since I am juicefeasting I only tasted a bit of the dressing, and oooo la la, it was amazing! The dressing could easily be used as a dip, or Kristina says it could be eaten as a soup. Simple and affordable. Can't wait until I can eat it noodles and all.
