This morning I awoke inspired to create a sweet and savory mango soup. What came together was a delight to the palate - ENJOY!

 

Simple Mango Gazpacho
2 cups diced fresh mangoes
2 cups freshly squeezed orange juice
1 cup chopped cucumber, peeled and seeded
1 small red bell pepper, seeded and chopped
2 garlic cloves, minced
1 small jalapeno pepper, seeded and minced (optional)
3 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro (basil or mint would also be nice)
1 - 2 tablespoons cold pressed organic extra-virgin olive oil
1 teaspoon onion powder
Himalayan sea salt and freshly ground black pepper
red onion, chopped, for garnish
avocado, sliced, for garnish

Reserve a bit of the mango, cucumber, red pepper, and cilantro to use as the final garnish, if desired. Process the remaining ingredients in a blender until smooth and creamy. Taste and adjust with salt and pepper to taste. Refrigerate until ready to serve.
Pout into bowls and garnish for soup or this can easily be poured into a glass and enjoyed as a savory, sweet smoothie.

I am planning to juice all those same ingredients but exchange pineapple for the mango.  So it would be:

pineapple

oranges

cucumber

red bell pepper

cilantro

garlic

Lime

Jalapeno

That soup looks beautiful!  Going to try this. 

A couple of questions..Do you normally store your dandelion greens outside of the fridge?  And how do you store your herbs inside the fridge to keep them from becoming limp?  The only way I have found is to put them in water and cover them loosely with plastic, otherwise the day after purchase they look pitiful!

wow, I'm thrilled - I found organic mangoes 4 for $5 today at my local WF - and I've got ALL of these ingredients on hand.

Guess what I'm having for dinner - MMMMMMMMango!!!

Going to make this into a juice tomorrow...yummmmmm!!!
Generally I wash my greens, whirl them through a salad spinner or just shake as much water as I can off, then wrap them loosely in a thin kitchen towel or paper towel and put them into plastic bags and store in one of the produce drawers in the lower part of my frig.  Dara swears by Debbie Meyer Green Bags and other rehabbers say their greens last sooooo much longer when stored in these bags.  I need to get some and do a video review and let you know.

I, too, use the Debbie Meyer Green Bags and LOVE them! They have saved me so much $$ :)
