Today's episode was completely Dana Carvey inspired!  I just want to say that if you are in a foul mood, put on Dana's Youtube clip, go in your kitchen and start choppin' some broccoli!  I promise you right now, it'll turn your sour frown upside down! 

 

Broccoli Cranberry Salad

2 tablespoons apple cider vinegar
1 teaspoon Dijon or stone ground mustard
1 teaspoon maple syrup or other sweetener of choice (I used coconut nectar)
1 garlic clove, minced
½ teaspoon lemon zest
Sea salt & freshly cracked black pepper, to taste
½ cup cold pressed organic extra virgin olive oil (I used about 1/4 cup)
1 -16 ounce package of broccoli coleslaw mix (I grated the real, fresh stalk & added a carrot)
½ cup fruit sweetened dried cranberries
¼ cup chopped scallions
¼ cup chopped pecans

In a large bowl, whisk together the vinegar, mustard, sweetener, garlic, and lemon zest. Gradually whisk in the olive oil while drizzling in a fine stream. Add the broccoli slaw, dried cranberries, and scallions. Toss to coat evenly with the dressing. Chill for at least 15 minutes. Top with chopped pecans just before serving.

Sure you can, I have tried it both ways.   I actually preferred the taste of the raisins.

Your sense of humor cracks me up.....Dana Carvey is a riot...where do you find this stuff? Can't wait to make this...all the ingredients in the house and ready to go!

Okay...I have to admit after reading through the recipes this wasn't one that 'caught my eye' so to speak but now that I've watched Penni make this, it looks totally delish!  I'm thinking a combo. of the cranberries & dried cherries would be good too...*thinking out loud here*.

Broccoli is one of those vegetables I crave so it's great to have a new yummy recipe.
That salad looks great!  I'm going to make it this week.  Thanks for sharing.  :)

I've always loved that Dana Carvey bit.  Can you use a spirooli spiral thing for broccoli stalks?  Please let me know if any of you have tried it.  I got  a spiralizer for Christmas (ahem, from myself) and I'm not sure what to use in it!

I made something with marinated broccoli stalk the other day and it was so good! I will have to make this one too, what a fun salad idea. My produce guys let us have the broccoli stems (he called them broccoli butts) for free too. My doggie loves them as well.
