Hi Everyone! Thanks for logging in to another week of Foodie Friday!I didn't get a post up last week because I've been keeping super busy in my current leading role as nurse, chef, maid & chauffeur to my dad. In between my care taking duties, I've been researching and learning all I can about the intricacies of cancer, it's prevention and treatment, and my findings thus far is that we are ABSOLUTELY on the right track with adding LOTS of fresh, organic, raw fruits and vegetables into our daily diets.
As you may know, cancer is the nation's second leading cause of death, and every day we hear about new risk factors or something we need to stop doing or avoid to reduce our chances of getting this deadly disease.
So we are already on to the good news, which is - Eating the right foods can help you protect yourself against cancer. A diet rich in fiber, vegetables, and fruits, including fresh juices, can make a big difference in your cancer risk. Adding 30 minutes of moderate activity five or more days a week will even further reduce your cancer risk!
Eating foods with phytochemicals are important, which can be found in beans and cruciferous vegetables like broccoli, cauliflower, cabbage, brussels sprouts, and kale. Dark green leafy vegetables like spinach, romaine lettuce, and collard greens are packed with fiber, lutein, and carotenoids, all cancer-fighting substances. Foods rich in the vitamins C, E, and A, all antioxidants themselves, can protect you from cancer by preventing the growth of free radicals in your body, so stock up on berries, citrus fruits, avocados, and apricots!
So in honor of my dad, and all I'm learning from his illness and the Woodstock Fruit Festival that is currently happening this week in New York - I though it would be the perfect week for Fruity Friday! I hope you will enjoy these two fruit combos while fruit is at it's best this summer!
Sunshine Fruit Combo
1 grapefruit, peeled and segments cut away from the membrane
2 oranges, 1 peeled and sliced & 1 segments cut away from the membrane
1 kiwi, peeled, halved and sliced
chopped cashews, optional
Combine all fresh fruits and arrange on a chilled plate to serve.
strawberries, halved & quartered
cherries, halved and seeded
orange, peeled and segments cut away from the membrane
fresh mint, for garnish
Arrange fruit in chilled serving bowls & enjoy!
